This easy homemade apple pie recipe is a delicious dessert, but it can be hard to make the crust perfectly every time.

Apple pie is one of the most classic and decadent desserts out there. When you’ve got some good, fresh apples that you’ve combined with the finest sugar and cinnamon, there’s nothing that finishes it off quite like a divinely rich pastry case.

We’ve written down one of our favorite apple pie recipes here – it’s a basic one, true, but it works every single time. When you want to make a crowd-pleasing dessert that’s guaranteed to succeed, try this recipe!

What’s the secret to a good filling?

Well, that’s tough to say. We’ve included a number of ingredients in our filling over the classic ‘apples and sugar’. We think that they all bring a special something – so let’s talk about a few of those.

  • Lemon juice
    • Lemon juice is crucial for a great pie! It forms a barrier between the apple chunks and the air around them, leading to the chunks of apple not browning as they sit in your kitchen.
  • Good apples
    • You might be tempted to use cooking apples, and for good reason! That’s a classic choice, with the sour flavor being a great combination of sweet sugar and pastry. However, try some other options, such as golden delicious – they’re sweet and rich, perfect for a luxurious pie.
  • Brandy
    • The brandy in this recipe is a surprising choice, but we love it. We compare a good brandy to a mixture between white wine and whisky – sharp and strong, while also being a little bit fruity. It goes well in this pie, penetrating into the apples for a great flavor.
  • Nutmeg
    • Cinnamon is the classic spice that people add to their apple pies, and for good reason – it’s wonderful! We would suggest adding nutmeg too, though, since it has such an aromatic flavor. The addition of nutmeg means that a slice of your pie will be beautifully spiced, what’s not to love?

What’s the best option to use as baking beads?

While we don’t use baking beads in this recipe, it’s certainly something that you could try if you just can’t get the crust right.

Baking beads are used to blind bake the pie, which, essentially, means pre-cooking the pie so that the liquid from the filling doesn’t seep into the pastry, making it soggy.

Ceramic baking beads are used to weigh down the crust so that it doesn’t rise in the oven, preventing the addition of your filling. Ceramic ones are the classic choice since they store and disperse heat so efficiently, and can last for an awfully long time.

A newer option is to use stainless steel ball bearings when baking your pastry crust. These balls will heat very quickly, of course, which means that they can often bake the crust a little quicker. If you’re often pressed for time, these could be a great option!

Finally, we come to the option that a lot of people use – dried beans. Using dried chickpeas, black beans, or lentils is a great way to get some baking beans particularly cheaply. They work just as well as any number of other options, and they’re pleasantly well-priced, to boot. We would suggest using smaller beans since they won’t leave a noticeable impression on your pie crust.

What kind of lid should you make for your pie?

There are nearly endless options to make a lid for your pie. The question, really, is to ask yourself how adventurous you feel like being.

We enjoy the classic option of creating a lid that’s simply a sheet of pasty, perhaps with a small venting hole cut into the center. From there, you could add small decorative pieces of pastry, such as leaf-shaped chunks, or sheets shaped with specialist cookie-cutters, for added aesthetic value.

You could also create thin strips of pastry and interweave them in a lattice formation in order to create a simple, but visually striking lid. We enjoy making the pie lattice as it helps with evenly cooking the apples while also ensuring a more enjoyable eating experience.

Finally, we come to the most artistic option. You could, if you wanted, select a range of cookie cutters and make a freeform pie lid. This could take any shape, even being assorted stars across the surface of your apple filling. The idea is that the apple will hold together well after it has been baked, so the freeform lid shapes would be allowed to simply cling to the apples as the pie is being cut. It’s an unusual choice, but one that we would certainly recommend to adventurous bakers!

What should you serve your apple pie with?

There are an awful lot of options, but we would argue that there are only three worth thinking about.

  • Custard
    • Custard is a wonderful choice for topping an apple pie. The warmth of the rich, thick vanilla liquid is a wonderful thing that’s hard to say no to on almost any dish. We enjoy serving it with apple pie for the same reason as we enjoy ice cream – vanilla and apple pie are a wonderful combination!
  • Cream
    • Cream is a great choice when you don’t want to put too much effort into the pie. Making a pie from scratch is a lot of effort, so going for something simple like some single cream is a delight. Simply drizzle the cream over the slice of pie, and watch as it moistens the pastry and makes for a tasty treat before your eyes.
  • Ice Cream
    • Ice cream is the classic, and there’s a good reason for that – it’s incredible. We would always suggest opting for vanilla ice cream since it’s a great flavor combination, but the choice is yours. The thing that really sells it is the mix of extreme cold in the ice cream and extreme heat in the pie – it’s a blessed mixture!

Ingredients
  

Pie Crust

Apple Filling

  • 5 Apples
  • 50 g lemon juice
  • 45 g White Sugar
  • 30 g All-Purpose Flour
  • 10 g Cinnamon Powder
  • 10 g Nutmeg Powder
  • 20 g Brandy
  • 10 g Apple Cinnamon Emulco Flavor
  • 1 Egg White for egg wash

Instructions
 

Pie Crust

  • Combine flour, salt, sugar and HICAPS Buttercream.
    313 g All-Purpose Flour, 1/4 tsp Salt, 15 g White Sugar, 225 g HICAPS Buttercream Ref Margarine
  • Mix ingredients until mixture resembles a coarse meal, with just a few pea-sized pieces of butter remaining.
  • Add 3-5 tbsp of cold water until dough is crumbly but holds together when squeezed with fingers.
    60 ml Cold Water
  • Divide dough into 2. Wrap each piece with plastic wrap. Let it rest for an hour.

Apple Filling

  • Peel apples and slice thinly.
    5 Apples
  • Drizzle and mix with lemon juice to prevent it from browning.
    50 g lemon juice
  • In a small saucepan and medium heat, combine sliced apples, sugar, and brandy.
    45 g White Sugar, 20 g Brandy
  • Add cinnamon powder and nutmeg, mix evenly.
    10 g Cinnamon Powder, 10 g Nutmeg Powder
  • After a few minutes, add Apple Cinnamon Emulco to enhance the flavor and aroma.

  • Add water and flour to thicken the mixture. Continue mixing.
    30 g All-Purpose Flour
  • Set aside.

Pie Assembly

  • Roll out 1 dough into a surface with flour until 10″ wide.
  • Keep dusting with flour to prevent it from sticking to table surface.
  • Transfer dough to your pie pan.
  • Fill the pie shell with apple filling. Set aside.
  • Add bits of butter on top.
  • Roll out the 2nd dough and cut into 1′ wide strips.
  • Cover top layer of pie with dough strips.
  • Weave the dough strips by alternating each strip.
  • Seal and crimp the dough edges of the pie by pressing it with your fingers.
  • Brush with egg wash and sprinkle with sugar for more golden brown effect.
    1 Egg White

Baking

  • Bake at 450 degrees F first for 15 minutes.
  • Then reduce the heat to 350 degrees F and continue baking for another 30 minutes or until golden brown.
  • Cool for 10-12 minutes before serving.
  • Enjoy.
