Prep Time : 15 mins.
Ingredients:
2 tbsp. HICAPS Buttercream – Ref Margarine
½ cup HICAPS Chef’s Gourmet – Premium Cheese
½ cup HICAPS Chef’s Gourmet – Keso
2 tbsp. Flour
2 tbsp. Sriracha Hot Sauce
1 cup Milk
Salt (To Taste)
Pepper (To Taste)
Procedure:
1. In a saucepan melt HICAPS BUTTERCREAM then add flour making a roux.
2. Add milk and HICAPS CHEFS GOURMET – PREMIUM CHEESE AND KESO. Mix until all the cheese are melted.
3. Add Sriracha and flavor with salt and pepper.
4. Serve immediately or store in a sterilized jar.
5. Use as nacho dip or dressing.
Spanish Sardines
Yield : 2 – 3 jars (Medium)
Prep Time : 45 mins.
Brining : 15 mins.
Ingredients:
½ HICAPS PURE – CORN OIL
1 cup Salt
9 cups Water
2 Bay Leaf
1 tbsp. Tomato Sauce
1 tbsp. Peppercorns
Siling Labuyo (To Taste)
300g Bangus Belly (Boneless)
Procedure:
1. Combine Salt and Water for brining, soak fish for 10 – 15 mins. and drain,
2. Arrange fish in a pan or pressure cooker. Add the rest of the ingredients.
3. The amount of the liquid should be enough to cover the ingredients. Cook for 45 mins to 1 hr. until the fish are tender. Add more HICAPS PURE – CORN OIL if needed.
4. Pour into sterilized jars and store until ready to eat.
Malunggay – Basil Pesto
Yield : 2 jars (Medium)
Prep Time : 30 mins.
Ingredients:
1 cup HICAPS Olive Oil
½ cup HICAPS CHEF’S GOURMET – KESO
1 cup Malunggay leaves
½ cup Basil
½ cup Nuts (Pine nuts or Walnuts)
2 – 3 cloves Garlic
Salt (To taste)
Pepper (To taste)
Procedure:
1.Put all ingredients in a blender, add HICAPS PURE – OLIVE OIL and mix until well blended.
2.Place in a sterilized jar and add additional olive oil if needed. Cover and Seal.
3.Refrigerate after opening. If stored properly, pesto will last up to 2 months.
