Ingredients
Kalabasa Soup
- 2 tbsp. HICAPS PURE – OLIVE OIL
- ½ cup HICAPS Buttercream Ref Margarine
- 500 g Kalabasa
- 250 g Bacon
- 5 cloves Garlic
- 400 g Coconut Cream
- 1 cup Chicken or Pork Stock
Bread Bowl (Sour Dough Starter)
- 700 g 1st Class Bread Flour
- 5 g Sunstar Instant Dry Yeast
- 300 g Water
Dough
- 700 g 1st Class Bread Flour
- 5 g Sunstar Instant Dry Yeast
- 300 g Water
Bread Bowl (Sour Dough Remix)
- 12 g Salt
- 3 g Superfine Bread Improver
- 100 g White Sugar
- 40 g HICREAM Creaming Fat
Instructions
Bread Bowl
- For the starter mixture, dissolve yeast in water.
- Stir in the flour using a wooden spoon. Keep stirring until you have a smooth paste.
- Cover loosely to allow gases to escape. Let stand at 26°C for at least 1 hour.
- The mixture should bubble and have a strong sour smell and set aside.
- For the dough mixture, Dissolve yeast in water.
- Mix starter and all the rest of ingredients.
- Knead until smooth and elastic.
- Rest for 15 mins.
- Scale into 538g – 3 pcs. Round and shape.
- Place onto greased baking trays.
- Proof until double in size. Bake until golden brown.
Kalabasa Soup
- Wash and peel kalabasa, slice into cubes.
- Roast kalabasa together with garlic and bacon. Drizzle with HICAPS PURE – OLIVE OIL in the oven for 30 -45 mins.
- Prepare pan, saute HICAPS BUTTERCREAM, garlic and roasted bacon until crispy.
- Add in the Roasted Kalabasa.
- Add the stock, season with salt and pepper. Then add in the coconut cream. Boil until thick.
- Using a blender, puree the soup mixture until smooth and creamy.
- Serve the soup in a bread bowl.
