Let me reminisce about some great times here: my go-to comfort food is menudo because my mom made it every weekend for family dinners. Speaking of, here’s the beloved pork menudo recipe many of us enjoyed. 

From the tender pork meat to the nice vegetables, menudo gives us a ton of flavors and textures. So, if you feel like cooking menudo soon enough, you must check out this pork menudo recipe.

Here are the usual menudo ingredients you need. Of course, feel free to put in extra ingredients as you like. We’re just covering the most common ones here. 

Pork shoulder

This pork serves as the primary source of protein for this dish. Braising it in the sauce produces a great deal of flavor, just like it does in other popular dishes like pork sinigang

Fat 

Any type of oil will do. You can use olive oil or soya oil to make the dish healthier. 

Aromatics 

For this, you can use garlic, onion, bay leaves, and tomatoes. Make sure to sauté the garlic and onion well first. 

Vegetables

You can use potatoes, carrots, red bell pepper, and green peas. For the love of all things delicious, don’t overcook your vegetables. 

Seasonings

For the seasonings, you need fish sauce, salt, and pepper. You can add your favorite brand of seasoning if you want. 

Others

As for extra ingredients, you can use raisins and chickpeas are included. Raisins produce a sweet flavor, but you don’t have to use them if you don’t like them.

How to Cook Pork Menudo

How to Cook Menudo

  1. Before cooking the meat, you need to marinate the pork in soy sauce and lemon.

    Combine the soy sauce and the lemon in a bowl. Then, add the pork and combine everything carefully. Set it aside inside the fridge for at least an hour. 

  2. Take the pork out of the refrigerator.

    Get the marinated pork out of the refrigerator for at least 15 minutes before you start cooking it. 

  3. Prepare the onion and garlic.

    Chop the onion and garlic. Next, sauté them. You’ll find that Filipino cuisine makes regular use of this cooking method. In fact, a majority of Filipino cuisine begins with the sautéing of garlic and onions.

  4. After the onions have reached the desired consistency, put in the pork.

    Add the pork that has been marinated and brown it over high heat. Next, add water (or pork broth), tomato sauce (or crushed tomatoes), and dried bay leaves to the dish. Depending on the quality of the meat, this should take anywhere from forty to sixty minutes. 

  5. Let the meat cook. 

    Keep boiling the meat while it’s covered in the pot for as long as it takes. 

  6. Add the liver.

    After the meat is cooked, add the sliced liver. You can add the liver right away or sauté it with ginger and garlic. Doing the latter makes it taste less gamey. 

  7. Add the vegetables.

    Next, add the vegetables and continue to simmer for a few more minutes. Because they will become mushy if you overcook them, the potato and the carrots should not be overcooked.

  8. Add seasoning.

    Sprinkle salt and pepper to taste, adjusting the amount to suit your taste.

  • 2 to 3 pieces dried bay leaf
  • 1/4 kilo pig liver
  • 1 cup potatoes, diced

  • pepper to taste
  • 1 cup carrot, diced

Instructions

  1. In a saucepan, sauté the garlic and onion in oil.
  2. Add the pork. Sauté for 5 to 10 minutes or until the pork browns.
  3. Pour in soy sauce, sugar, tomato sauce and water.
  4. Next, add the bay leaves. Simmer for about 30 minutes or until the pork becomes tender. 
  5. Add the chopped liver and cook for 5 more minutes.
  6. Add potatoes, carrots, and other vegetables you want. 
  7. Lastly, season with salt and pepper. 
  8. Stir and cook for 15 more minutes.
