To cater to the growing demand and address modern baking technology, built a new, state-of-the-art building. The new Gardenia bakery in Singapore cost S$18.5 million. It also increased the manufacturing capacity by 2.5 times, with the quality being maintained. 

As a highly automated plant, it also became one of the most technologically advanced plants in the region. 

1994

A second bakery was commissioned by Gardenia in Kuala Lumpur, Malaysia. 

1996

New bakeries were established in the countries of China and India.  

1997

A third bakery was acquired by Gardenia in Kuala Lumpur, Malaysia. The company also further extended its regional operations in the Philippines. 

1999

The company then built a fourth bakery located in Johor Bahru, Malaysia.

2001

The brand acquired Bonjour, the second most in-demand packaged loaf brand in Singapore after Gardenia.

In the same year, Gardenia set up a new bakery in Malaysia located at Bukit Kemuning.

2002

Gardenia established a new bakery in the Philippines so it can expand its reach in the country.

Step 1: Automatic Blending

The production process of Gardenia bread begins with the automated blending of ingredients in various, controlled amounts. This ensures that all loaf produced will be of the same quality.

Step 2: Production of Sponge Mix

Gardenia is specially formulated with enriched flour, purified water, and yeast. To form a sponge, vitamins and minerals are added together and later released into a trough.

Step 3: Fermentation Room

Under controlled temperature and humidity, the sponge dough is kept in a fermentation room for hours. Thus, this process allows the carbon dioxide to get released and the sponge to rise.

This also helps the sponge to develop a distinct texture, aroma, and taste. Together, these things make Gardenia special.

Step 4: Production of Dough Mix

The operator mixes the sponge dough with other ingredients to form another dough. The ingredients include skimmed milk powder, vegetable shortening, wheat germ, bran, malt, barley, or honey. The ingredients added also depend on the type of bread being baked.

Step 5: Divider

The dough gets divided according to the standard weight for each loaf. Then, the dough gets conveyed to a rounder.

Step 6: Rounder

The rounder then kneads each piece of the divided dough. This traps the carbon dioxide, which will allow the bread to develop a soft texture after getting baked.

Step 7: Checkweigher

The pieces of the dough will then go to the check weigher, where any piece over or under the standard weight automatically gets rejected.

Step 8: Intermediate Proofer

In the intermediate proofer, the dough is left to rest for 10 minutes. This is done before the dough is molded and placed into the baking pans.

Step 9: Molder

According to the desired design or order, the dough gets shaped. Then, it will be automatically placed on the baking pans.

Step 10: Automatic Lidder

Automatically, the pans get lidded for the baked bread to have uniform rectangular shapes.

Step 11: Final Proofer

During this stage, the yeast further rises under a controlled temperature and humidity. Once the dough rises to the ideal height, it gets prepared for baking.

Step 12: Tunnel Oven

Step 13: Automatic Delidder and Depanner

Step 16: Daily Delivery

As early as 3 AM, Gardenia prepares for its daily deliveries. The deliveries happen for 364 days annually. Freshly baked bread gets stacked into Gardenia’s delivery trucks. They operate seven days a week. The products then get delivered to retail outlets across the country.
