Filipino Pork Igado is a traditional meal originating from the Ilocos region of the Philippines. Igado is quite literally a hearty meal since Igado in English means heart, and pork heart is one of its aspects. This dish features a medley of pork tenderloin and pork liver, pork kidney, or pork heart in soy sauce and vinegar with bell peppers, green peas, and other seasonings, which results in a flavorful stew.
Heat the oil in a large pan over medium heat. Add the onion and garlic and sauté until fragrant.

Add the pork tenderloin and cook until browned.

Then, add the liver and cook for five minutes.

Pour in the vinegar mixture and add the bay leaves and peppercorns. Bring to a boil, then lower the heat and simmer for 30 minutes or until the meat is tender.

Next, put in the sliced bell peppers and green peas and cook for an additional five minutes.
