Lengua de Gato are Filipino butter cookies. They are thin, crispy, and of course, buttery. You can also easily make them at home. In a nutshell, Lengua de Gato are thin and crispy Filipino cookies. They have long and flat oval shapes resembling a cat’s (gato) tongue (lengua). Often offered as a midday snack, these cookies get paired with coffee or tea. Aside from making great holiday treats, these cookies also serve as great pasalubong.
Preheat your oven to 190 degrees Celsius or 375 degrees Fahrenheit.
Cream the butter using an electric stand or hand mixer.
1/2 cup HICAPS Buttercream Gold
Gradually add the sugar. Continue mixing for two to three minutes.
1/2 cup White Sugar
Fold the egg whites gradually. Continue mixing for another three to four minutes.
2 Egg White
Add vanilla extract and salt.
1/2 teaspoon Emulco Vanilla Flavor, 1/4 teaspoon Salt
Gradually add the flour. Continue to mix for two to three minutes or until the flour is properly incorporated.
1 cup All-Purpose Flour
Get your piping bag and put a round tip on it.
Place the mixture inside your piping bag
Line a baking tray with parchment paper.
Pipe the mixture on it. Each one should be 2 to three inches long.
Put the cookies in an oven and bake for about 10 minutes or until the cookies are slightly brown.
Remove the cookies from the oven. Place them on a cookie rack until they cool down.
